De wijngaarden worden bio verbouwd (vanaf 2023 gecertificeerd), en met het eigen paard geploegd en bewerkt. Vincent deed onderzoek naar de verschillende terroirs in zijn clos. Beschrijving: Fijne rijpheid, strak einde, licht rood fruit, veel energie en vulling.

Lekker bij: Aperitief met oesters en snacks.

Leuk weetje: Alle basiswijnen vergisten eerst voor tien maanden op eikenhout met minimaal sulfiet. Om vervolgens tijdens tirage gebotteld te worden voor de sur latte periode. Na het degorgeren rijpen de wijnen nog 6 maanden met de natuurkurk voordat ze het domein verlaten.
