白杉酒造的特色是所有清酒利用食用米來釀造。 這款「 金シャリ」也是使用食用米「ササニシキ(Sasanishiki)」來釀製而成,雖然白杉酒造經常利用黒麹(特徵是容易產生酸味),但這次他們使用了黃麹能容易控制酸度。 儘顯旨味和果味,餘韻清脆。

白杉酒造位於京都府丹後地區,是生產越光米的地區之一,品質非常優秀更在西日本中最受歡迎。
「很想運用這麼優質的稻米來做美酒!」就是這樣第11代傳人白杉悟先生,開始利用食用米來釀造清酒。
通常釀造清酒會使用「酒造好適米」,但在2015年開始改變全面利用食用米來釀造清酒。
使用食用米釀造日本清酒是非常罕見的,不但要通過特殊的發酵方法,更使用燒酎用的麹菌來釀製,
通常日本酒只使用一種類型的酵母,他們卻使用三種不同類型的酵母來釀製,經過多次反複試驗,開發新派的日本清酒。
