Process: Cherries are harvested and immediately depulped. The wet parchment then underwent a well-controlled fermentation for 144 hours. The coffee was dried using mechanical drying machines for a short duration of 36 hours until desired moisture percentage was reached.

This is our first coffee from producer Mateo Bahamon, though it is another in a long line of coffees we have purchased through Osito. We love the opportunity to grow in partnership with Osito as they share so much of our core operating values. They commit to their producers despite what is happening in the market or what the trends are saying. They take risk at the benefit of the producers they are paying premiums to. Osito's ethos is regularly challenging us and stirring us back to our origins and desires for the type of coffee buyer we wanted to be.
